Gioia’s Deli, home of the famous Hot Salami sandwich, is located on "The Hill" at the corner of Macklind and Daggett. In 2016, Gioia's Deli opened a second location downtown St. Louis at 903 Pine. Locally owned and operated since 1918, Gioia's Deli was built from brick and wood from the 1904 World's Fair. Gioia’s Hot Salami sandwich is St. Louis’ sandwich. The Hot Salami or Salam de Testa is made fresh daily and is a combination of beef and pork. The same recipe and techniques have been used to make the Hot Salami for over 96 years. All product is sourced locally from DiGregorio’s Market, Fazio’s Bakery, Volpi Salumeria and Gelato Di Riso.

Hot Salami Cooking Instructions

5 pound log Crock Pot

  1. Make sure crock pot is large enough to fit a 12" log
  2. Cook raw, unfrozen hot salami on low for 8 hours.
  3. Do not put anything else in pot but Hot Salami.
  4. Once the Hot Salami is at an internal temp of 180 degrees you can take off casing and enjoy.

5 pound log Boiling

  1. Boil raw, unfrozen Hot Salami  until internal temp is at 180. (Bring the water to a boil with the Hot Salami is in the pot) 
  2. Once the Hot Salami is at an internal temp of 180 degrees you can take off casing and enjoy.

Hot Salami Dogs (3 options)

  1. Grill Slow and Low just like a Brat
  2. Cook in crock pot with sauerkraut for 4 hours on low.
  3. Boil for 30 minutes.

Snack Size Hot Salami (2 options)

  1. Boil unfrozen for 1 hour
  2. Crock Pot until internal temp hits 180. (Do not add anything to crock pot)
